Summer Bean Salad
3 cups edamame
2-1/2 cups frozen corn, thawed
1/3 cup red onion, diced
1/2 tsp ground black pepper
Combine all ingredients in a microwaveable dish. Heat on high in microwave for 4-5 minutes. Also good cold.
