4 cups whole wheat flour (divided)
1/2 cup nonfat dry milk powder
1 Tbsp salt
2 pkg. dry yeast
3 cups water or potato water (potato water somehow makes a softer, more flavorful dough)
1/2 cup honey
2 Tbsp oil
4-4 1/2 cups white flour
Combine in mixer bowl 3 cups of the whole wheat flour, the dry milk powder, salt, and yeast. Heat water, honey, and oil in a saucepan until warm. Pour warm (not hot) liquid over flour mixture. Beat with electric mixer for 3 minutes. Stir in the rest of the whole wheat flour and the white flour. Knead for 5 minutes, using additional white flour if necessary. Place in a greased bowl, turn, and let rise until doubled in bulk. Punch down, divide dough in half and shape into loaves. Place in greased 9x5" bread pans. Cover and let rise 40-45 minutes. Bake at 375* for 40-45 minutes.
