Soy Banana Bread

1 cup plus 2 Tbsp soy flour
1 1/3 cup white flour
2 3/4 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
1/2 cup sugar
1/3 cup dry milk powder
1/4 cup shortening
1 egg, beaten
1/3 cup water
1 cup mashed bananas (2-3)
1/2 cup chopped nuts (optional)

Preheat oven to 350*. Sift together the flours, baking powder and soda, salt, sugar, and milk powder. Cut shortening into dry ingredients. Add egg, water, bananas and nuts and mix just until moistened. Spread batter in a greased 9x5x3" loaf pan. Bake for 50 minutes. Remove loaf from pan to cool. Delicious warm or toasted. (This loaf can tend to be a bit dry, which is why it's best either warm or toasted. I have never worked with it to make it more moist, though it would certainly be possible.)
