Spring Lemon Dressing

Peel a lemon & place in blender along with:

2 T. olive oil
2 cloves of garlic
1/4-1/3 c. honey (to your taste)
1" chunk of ginger-coarsely chopped
salt & pepper to taste

Puree until smooth.
Serve over fresh greens (or your choice of fresh vegetables)
