Bacon, Avocado, and Cheese Breakfast Tacos

6 large eggs
1/4 cup milk
salt and pepper
1 Tbsp canola or vegetable oil
1 large avocado, sliced
8 burrito-size flour tortillas
8 cooked bacon slices
4 slices cheddar cheese

In a mixing bowl, whisk together the eggs, milk, and salt and pepper.

Heat the oil in a large skillet, and place over medium-high heat. Pour in the egg mixture and scramble.

Heat the tortillas for a minute in the microwave, or wrap in aluminum foil and place in a 300* oven for 10 minutes.

Lay out warm tortillas on a clean countertop. Scoop the scrambled eggs onto the tortillas, dividing it equally. Add 1 slice of cooked bacon, 1/2 slice cheese, and 1-2 slices of avocado to each tortilla. Roll up the tortillas and serve immediately, or freeze.

Serve with fruit salad or melon platter.
