Pumpkin Pie Oatmeal

This recipe is only enough for one serving, so multiply it as needed for your family size. 

1/4 cup milk
6 Tbsp water
1/4 cup old-fashioned (rolled) oats
Pinch cinnamon
Pinch nutmeg
1/8 cup canned pumpkin puree
1/8 cup sliced almonds
Sweetener of choice, to taste
1/8 cup water
Splash of vanilla

In a small pot, bring milk and water to a boil over medium heat. Add oats, cinnamon and nutmeg. Reduce heat to medium-low and simmer until liquid is absorbed, about 7-10 minutes, stirring occasionally. Once the liquid is absorbed, stir in pumpkin, almonds, vanilla, and sweetener (if desired); set aside.
