Jiffy Salad

1 small head lettuce
2 to 3 hard-cooked eggs, chopped
1/4 tsp salt
1/4 tsp pepper
1/4 cup oil
2 Tbsp vinegar
1 tsp soy sauce
1 Tbsp chopped fresh parsley
1/4 cup grated Parmesan cheese

Shred the lettuce, top with hard-cooked eggs, and toss with the other ingredients whisked together for dressing.
